Grilled salmon with fresh herb salsa

Grilled Salmon with fresh herb salsa – This healthy recipe is easy to make. The packed flavor of the salmon along with the savory-spicy taste of the fresh salsa makes this dish taste delicious.

TOMATO AND HERB SALSA

5 Roma or plum tomatoes1 small shallot, very finely diced

1/4 cup Extra Virgin Olive Oil

1 clove garlic, crushed

1 red chilli, finely diced (optional)

1 tsp  Salt

Black Pepper (Optional)

1/2 tsp sugar

1 big handful Italian parsley and/or basil, roughly chopped
TO SERVE

Baby spinach

1 Lemon slice

1 then slice Carrot

Extra Virgin Olive Oil

Salt

 

Cut cube the tomatoes and then into small cubes. Sweat the shallot in the olive oil until soft and translucent. Add the garlic and chilli and cook for a further 2 minutes. Remove from the heat and fold in the diced tomato. Add a few more glugs of  Extra Virgin Olive Oil and season with Salt, Black Pepper and sugar to taste. Stir the herbs through the salsa to serve.

wash baby spinach in a pot of slotted spoon and drop them into a bowl of iced water for 30 seconds to prevent them from cooking further. When you are ready to serve, the salmon with  Extra Virgin Olive Oil and season with  Salt and  Serve salmon with a generous scoop of tomato herb  salsa.
